Here at Larkfield Farm we believe in working with nature, not against it. Our animals are provided with fresh grass, water, and free choice mineral year around. We do not use commercial fertilizers, herbicides, or pesticides on our pastures. We do not use hormones or antibiotics our livestock. We use Holistic Management practices on our land. Our cows are moved to fresh paddocks daily. Our sheep are also rotated several times a week to ensure that they are always on fresh grass.
Because our lambs have been rotated to fresh grass so often, during their whole lives, they haven’t been in need of wormer. They eat only the freshest grass from lush fields- fields that aren’t sprayed with chemicals or commercial fertilizer. Our animals eat only all natural grass. Remember, you are what you eat!
Our cattle herd is rotated to fresh plots of grass daily- sometimes twice daily- in one unit. This means that they eat, spread manure, and build organic matter in the soil simultaneously. They then are moved and won’t return to the same spot for months. This gives the land a time to rest and replenish. We have seen a huge increase in the fertility of our soil, and in the biodiversity of our grasses, in the years that we have been using this practice. Our land is healthier, our operating costs are down, our meat is leaner and healthier, and absolutely delicious. We feel truly great about putting this beef on our table!
Our Katahdin rams are born and raised on our farm. They have never received any feed supplements, hormones, or medications of any kind. Sheep with any kinds of health problems are culled early and aren’t allowed to reproduce with the flock.
We are taking deposits for custom orders of quarter, half, or whole cuts of lamb. We also have individual, meal sized portions of meat for sale. Our lamb is 100% all natural and completely grass fed, resulting in a mild tasting and tender piece of meat. Lamb chops, lamb steak, lamb roasts, and ground lamb burger will be among the options available.
Grass fed beef is grown slow. It takes anywhere from 22-36 months for 100% grass fed beef to reach optimum marbling and tenderness. And boy is it worth it! All natural grass fed beef is lower in saturated fat and cholesterol and higher in omega 3 fatty acids and Vitamin E.
We have Great Pyrenees shepherds for our flock of sheep. They were put with the flock at 8 weeks old, have never left the flock, and do an amazing job of keeping our sheep safe. We don’t know what we would do without them.
Larkfield Farm is located in Noxubee County Mississippi and has been owned and farmed by the Schimmel family since 1902. Bryan and Becky are the fifth generation to live and make a life on the place. Feel free to give us a call or schedule a visit.
We are dedicated to taking care and protecting the land we farm and leaving it in better shape for the generations to come. We realize that every thing in nature works together as a cycle. We believe that the holistic managment system we use is the key to healthy soil and sustainable farming. We have seen how the traditional ways of farming and ranching have mined the fertility and minerals out of our soils. On our farm we try to mimic nature‘s natural grazing pattern.
